Healthy French Fries

Cut up your own real potatoes, soak them in salt water for 30 minutes to release some of the starch and to have them crisp up nicely when cooking, dry them on some paper towels, lay them on a baking pan and brush with olive oil, salt and pepper to taste.  Turn them periodically while in the oven and bake for about 45 minute or until golden brown and you have got yourself some healthy french fries!  You can do this with sweet potatoes as well to enjoy some sweet potato fries. 

Enjoy guilt free.
